Vegan Substitutes

Egg:
For Baking Sweets:
Substitute For 1 Egg

  1. Flax Egg: 1 Tbl Flax Meal + 3 Tbl Warm Water. Mix Well and Set aside 3 Minutes to Congeal. 
  2. 1/4 Cup Applesauce
  3. 1 Mashed Banana
  4. 3 Tbl Mashed Fruit
  5. 3 Tbl Fruit Preserves or Jam
  6. 3 Tbl Peanut Butter
  7. 1 Tbl Chia Seed + 1/3 Cup Warm Water
  8. 1/2 Cup Soy,Rice, or Coconut Yogurt
  9. 1/4 Cup Mashed Sweet Potatoes
For Baking or Cooking Savory Foods:
Substitute for 1 Egg
  1. 2 Tbl Instant Mashed Potatoes
  2. 2 Tbl Potato Starch + 2 Tbl Water
  3. 2 Tbl Cornstarch + 2 Tbl Water
  4. 1 Tbl Flax Meal + 3 Tbl Warm Water
  5. 1/4 Cup Pureed Soft Tofu
  6. 3 Tbl Peanut Butter
  7. 1 Tbl Chia Seeds + 1/3 Cup Warm Water
  8. 1/2 Cup Plain Soy, Rice, or Coconut Yogurt
  9. 1/4 Cup Mashed Potatoes

Milk:
For Sweet Food Substitute Equal amount Soy, Rice, Almond or Coconut Milk
For Savory Foods, Coconut milk is a little too sweet, Even if you buy the Unsweetened Kind, I don't Suggest using it, But instead Substitute Equal amount Soy, Rice or Almond Milk.

Buttermilk:
For 1 Cup: Mix 1 cup of Unsweetened Vegan Milk with 2 Tbl Lemon Juice or White Vinegar. Set aside 3 minutes to curdle.

Butter:
Substitute and Equal amount of Coconut Oil, Or Vegan Butter. Earth Balance is the best tasting.

Heavy Cream:
Coconut Cream in the Can, Or Coconut Milk in the Can
To Make Coconut Whipped Cream: Put 2 Cans of Coconut Milk in the Fridge for 4 Hours, Open them, Scoop out the Cream that has gone to the Top of the can, Leaving the liquid in the can. Whip up the Cream for 15 min till you have stiff peaks.

Meat Substitutes: 

Legumes: Beans, Peas, and Lentils can be used in Soups and Stews and Other Dishes in place of Meat.

Fake Meats: There are a Variety of Fake Meats in the Freezer Sections, Like Morningstar Farms, Gardein, Quorn, & Simple Truth that make Many types of Fake Meats like Chick'n Patties, Chick'n Nuggets, Meatless Ground, Meatless "Beef" Tips, Vegan Burgers, Chick'n Strips Etc.

Seitan: Made from Vital Wheat Gluten, This is Good for Replacing strips of Meat, like in Sandwiches, Soups, Stews, Fajitas, or Stir-Fries.

Tofu: Tofu is very Versatile. It comes in many forms, From Silken to Extra Firm, to Smoked Tofu. Its Mild in taste and absorbs the flavor of any recipe. 
Silken Tofu is good in Soups, Desserts and Smoothies.
Extra Firm Tofu is good for Frying up. (fry for a long time to get a Meat texture)

Textured Vegetable Protien (TVP): Made from Defatted Soybeans, Makes a Good Substitute for Ground Meat. It comes dehydrated usually, Its best to soak in Vegan Vegetable or Chick'n Broth before adding to a Meal.

Cheese: 

Nutritional Yeast: It has a Cheesy Flavor

Cashews: Soaking overnight and blended with Nutritional yeast makes a Mock Velveeta.

Tofu: Mixed with Spices and Blended can make a good Mock Cheese.

Store bought Vegan Cheeses: Your Local Store may have a Variety of Vegan Cheeses like Almond and Soy Cheese.
