Coconut Curry, Lentil Soup

Coconut Curry Lentil Soup

Ingredients: 
5 Strips of Kelp
3 Cups of Water
2 Cans Coconut Milk
1 Jar Red Curry
Half a Package of Rice Noodles
2 Cups Green Lentils or Other Lentils
3 Tbl Yellow Powdered Curry
3 Tbl Garlic Powder
4 Tbl Onion Powder
1 Tsp Coriander
1/2 Tsp Nutmeg
1/2 Tsp Clove
1 Tsp Tumeric
Juice of 1 Lime

This is The Correct Ingredients for this Soup. If the Can has more than these Ingredients its a fake kind and wont taste as good, Or may have a Slimey texture.




This is going to have a Kelp Broth instead of a Vegetable Broth, You can Substitute Vegetable  if you want.
Bring 3 Cups Water and 5 strips of Kelp to a boil.  Remove the Kelp.





Add the Lentils and let them cook till they are Part-way done. about 5 Min.




Add the Coconut milk. Make sure to get all the Creme off the top of the can, This is where all the flavor is at.




Then add in the Whole Jar of Red Curry Paste. And all other Seasonings.

Let Cook for 30 Min Or until the Lentils are Fully cooked.



You Should end up with Something that looks like this. 
Add Juice of the Lime
Turn the Burner off and Add the Rice noodles and Let set for 30 Min
 Serve

You can serve with the Kelp if you like it or Fry up the Kelp and serve it as Chips.
You can add Tofu or Fry up some tofu and add to the soup, Or even add sprouts.

Vegan Meatball Sub

Sometimes you just want something that's going to go over well with your Non-Vegan friends and family. THIS IS THAT RECIPE!
This Vegan Meatball Sub Sandwich has the texture (minus the disgusting tendons, veins and fat, ugh!) and flavor of meat.
Its a good recipe to fake out your Non-Vegan friends and family. Also to show skeptics that Vegans don't just eat Salads.


Meatballs
1 14 Oz Package Ground Beef style Meatless Ground (Gimme Lean , The Sausage style works good also)
1/2 Cup Bread Crumbs
1/4 Cup Minced Onion (optional 1/2 cup is what I did in pictures)
2 Cloves Of Garlic, Minced
1 Tbl Worcestershire Sauce
2 Tbl Fresh Chopped Parsley
Salt and Pepper to taste
about 4 Tbl Of Water, If Needed

Heat up Olive Oil in a Skillet or Pan.

Mix all Ingredients together except water. Your hands work best to really mush everything together. 
If too dry, Add some water to get everything to stick together.
It should look something like this


Roll into balls, and fry up in skillet. 
-I Found it best if they are in the shape of a patty almost so they fry up evenly. 

Cook Until they are Brown and Caramelized, This is really Important, since we need that flavor in Vegan Cooking.


Next add Marinara sauce or a Sauce of your choice to the Meatballs so that it all warms up together.


Add inside a Warm Toasted Hoagie Bun.
You can top it with Vegan Cheeze if you like.

Grain Free Tabbouleh

This is a recipe for when its too hot to cook.  This is a nice cold salad that's packed with protein.
You can make this how the Recipe says, or add cooked and chilled Quinoa, or Barley.
My Brother and I don't like the texture of tomatoes so my solution was to put it in the food processor and make the sauce with it. You can  leave the tomato in diced chunks, or use cherry tomatoes.

Tabbouleh
1 Head of Cauliflower
2 Cans of Garbanzo Beans
1 Bunch of Parsley
1 Bunch of Cilantro
4 Green Onions

Sauce
1 Large Tomato
Half a Red Onion
3 Tbl Lemon Juice
4 to 6 Tbl Olive Oil
2 Garlic Cloves
Salt and Pepper to Taste

Put Cauliflower in a Food Processor, Pulse a few times till it chops it up a bit


I used an Entire Bunch of Parsley and Cilantro, My Family likes Cilantro very much and I wasn't planning on using it for anything else, so I just put it all in.



 Add in the Green onions and Pulse a few times til it gets mixed in


Dump out the mixture into a big bowl. Add the 2 Cans of Garbanzo beans after you have drained them.

I didn't clean out my Processor, just got out as much as I could

Add the Tomato, Red Onion, Garlic, Lemon Juice, Olive Oil and Salt and Pepper to the Food Processor. ( its OK if its not completely clean its all the same stuff)


Blend all of it up!


Add the Sauce to everything




This is best served cold, so refrigerate it after you make it.

Orange Dressing with Tofu Croutons

Orange Dressing:
Zest and Juice of 1 Orange
3 Tbl Olive Oil
1 Tbl Rice Wine Vinegar
1 Tsp Onion Powder
1 Tsp Garlic Powder
Salt and Pepper to Taste

Zest Orange and Juice it




Add Oil & All Other Ingredients 



Tofu Croutons
A Block of Extra Firm Tofu
Nutritional Yeast
Garlic Powder
Fresh Black Pepper

Drain Tofu of its Liquid that's in the Package
Set it on a cutting board


Slice Tofu In Half Length-wise


Then Make Slices



Sprinkle with Nutritional Yeast, & Seasonings.


Fry Tofu Squares


Put Tofu on a Paper Towel, to absorb the extra oil.

Assemble a Salad of Your Choice

Top with Tofu Croutons and Drizzle Orange Dressing

Vegan Fried Potato Salad

Its that time of year again...time for Cold Salads. Right now in our house we are trying to keep windows open so we don't have to turn on the AC yet, So we can save electricity. Plus its nice in the mornings and at night outside, nice cool air. So I didn't want to heat up my house with steam from boiling potatoes.
I wanted to make a Potato Salad, but thought boiled potatoes might be too bland if I was going to make it Vegan. 
Here is a recipe that I made up

Vegan Fried Potato Salad


5 Large Potatoes

Half a Head of Cabbage
Half a Red Onion
A Can of Black Olives
About a Cup and Half of Vegan Mayo
About 1/4 Cup of Yellow Mustard
Pickles
a Dash of Red Cayenne Pepper
Salt and Pepper to taste
(Optional) I like to put about a Tbl of Italian Seasoning in mine

I bought some very large Potatoes. You can change the amount of Potatoes to fit your needs. 


Cut the Potatoes in Half Length-wise. Then, cut slices of that.


Then Fry Them UP!!!


Cool fried potatoes in the fridge.
Cut Pickles,Olives and Cabbage in Slices.
Cut up Red Onion.

Mix Everything in a Big Bowl. Don't Over Mix
